Steps
Steps
- 1Heat the oven to 150°C and line a large baking tray with baking paper.
- 2Mix the oats, almonds, hazelnuts, pumpkin and sunflower seeds, cinnamon and salt in a large bowl.
- 3Warm the maple syrup, oil and vanilla together, pour over the dry mixture and stir until every flake is coated.
- 4Spread it over the tray in an even layer about 1 cm thick and press it down firmly with a spatula; pressing is what makes clusters.
- 5Bake for 35–40 minutes, turning the tray round halfway but without stirring, until golden. It crisps as it cools.
- 6Let it cool completely on the tray without touching it, then break it into clusters and stir in the dried fruit. Fruit baked with the oats turns hard.
- 7Keep in an airtight jar for up to 3 weeks.
