Steps
Steps
- 1Heat the oven to 160°C. Halve one garlic clove, rub the cut side all over a 25 cm gratin dish, then butter the dish generously. Crush the other clove.
- 2Slice the potatoes 3 mm thick, with a mandoline if you have one. Don't rinse them: their starch is what thickens the cream.
- 3Put the milk, cream, crushed garlic, nutmeg, salt and pepper in a large pan, add the potatoes and bring to a simmer, stirring gently so they don't stick.
- 4Simmer for 8–10 minutes, stirring carefully, until the liquid has thickened and the potatoes are just starting to soften.
- 5Tip into the dish, level the top and press the slices flat so the cream comes just to the surface.
- 6Bake for 1 hour 15 minutes, until a knife slides through with no resistance and the top is golden and bubbling.
- 7Rest for 15 minutes before serving, so it sets and cuts cleanly.
