Steps
Steps
- 1Cut the halloumi into 1 cm slices, pat them dry and brush with 1 tbsp of the olive oil.
- 2Halve the tomatoes, slice the cucumber into half-moons and the onion into thin rings, and spread them over a platter with the rocket and olives.
- 3Whisk the remaining oil with the lemon juice, oregano and pepper. It needs no salt: the halloumi and olives bring enough.
- 4Heat a griddle pan or heavy frying pan over high heat until smoking. Lay in the halloumi and cook for 2–3 minutes a side without moving it, until charred stripes form and the inside softens.
- 5Pour the dressing over the salad, lay the hot halloumi on top, drizzle with the honey and tear over the mint. Serve at once: halloumi turns rubbery and squeaky as it cools.
