Semolina Milk Pudding

The warm breakfast of Bulgarian childhoods — semolina cooked in milk with sugar and a knob of butter into a smooth, loose porridge, finished with cinnamon and a spoonful of jam. Raining the semolina into the milk while whisking prevents lumps.

Steps
Steps
- 1Heat the milk with the sugar and salt in a heavy pan over medium heat until it just comes to the boil — watch it, as milk rises fast.
- 2Lower the heat and rain in the semolina in a thin stream, whisking constantly.
- 3Cook for 5–7 minutes, stirring with a wooden spoon, until it thickens into a loose porridge that coats the spoon; it sets further as it cools, so take it off a little thinner than you want it.
- 4Take off the heat and stir in the butter and vanilla.
- 5Leave for 2 minutes and stir again, as a skin forms quickly.
- 6Ladle into bowls, sprinkle with cinnamon, add a spoonful of jam to each and serve warm.
