Steps
Steps
- 1If your beef is not sliced already, freeze it for 30 minutes and cut it across the grain as thinly as you can.
- 2Bring the dashi, soy sauce, mirin, sake and sugar to a simmer in a wide pan, add the onion and cook for 5 minutes until soft and translucent.
- 3Add the ginger and the beef, separating the slices, and simmer for 1–2 minutes only, skimming off the foam, until the beef has just lost its pink. Any longer and it turns grey and tough.
- 4Taste the broth and adjust it with a little more soy sauce or sugar: it should be noticeably sweet and salty, stronger than a soup, because the rice will dilute it.
- 5Divide the rice between two deep bowls and spoon over the beef and onion with plenty of the broth so it soaks into the rice.
- 6Top with the pickled ginger and spring onion, and an egg yolk in the centre if you like.
