Steps

  1. 1
Cut the potatoes into even chunks and boil them in salted water for 20 minutes, until completely tender.
  2. 2
Meanwhile heat the oil in a wide pan and cook the onions and carrot over medium heat for 8 minutes until soft, then add the garlic for 1 minute.
  3. 3
Add the beef, raise the heat and cook for 8–10 minutes, breaking it up, until browned and any liquid has gone.
  4. 4
Stir in the tomato purée, thyme and stock, season with salt and pepper and simmer for 10 minutes until moist but not wet. Stir in the parsley and spread in a 20 × 30 cm baking dish.
  5. 5
Heat the oven to 200°C. Drain the potatoes and mash them with the butter and the milk, heated, until smooth; season with salt, pepper and the nutmeg.
  6. 6
Spread the mash over the meat, rough up the surface with a fork and scatter with the Gruyère.
  7. 7
Bake for 25 minutes, until golden and bubbling at the edges. Rest for 5 minutes before serving.
