Steps
Steps
- 1Cut off the carp's head and tail and remove the fillets from the backbone. Cut the fillets into 4 cm steaks, score the skin side every 5 mm to cut through the fine bones, salt them lightly and refrigerate.
- 2Put the head (gills removed), tail, bones and skin in a pot with the onions and the water, bring to the boil and simmer 1 hour, until the onions have dissolved.
- 3Take off the heat, stir in the sweet and hot paprika, then simmer 30 minutes more.
- 4Pass everything through a sieve, pressing hard so the onion and the fish flesh go through — this purée is what gives halászlé its body.
- 5Return the strained broth to a wide pot, add the rest of the salt and bring to the boil.
- 6Add the carp steaks, pepper and tomato and simmer for 12–15 minutes without stirring — shake the pot instead, so the steaks don't break.
- 7Taste for salt and serve piping hot in deep bowls, with the fresh chilli on the side.
