Steps

  1. 1
Heat the olive oil in a large pot over medium heat and brown the lamb for 5 minutes.
  2. 2
Add the onion, celery, ginger, turmeric, cinnamon and black pepper and cook 5 minutes, stirring, until the onion softens.
  3. 3
Stir in the tomato paste for 1 minute, then add the grated tomatoes, half the coriander and half the parsley and cook 5 minutes.
  4. 4
Add the lentils and 1.8 litres of the water, bring to the boil and simmer, partly covered, for 45 minutes, until the lamb and lentils are tender.
  5. 5
Add the chickpeas and salt and simmer 10 minutes, then add the vermicelli and cook 5 minutes more.
  6. 6
Whisk the flour with the remaining 200 ml of water until smooth and pour it into the soup in a thin stream, stirring constantly.
  7. 7
Simmer 5 minutes, stirring, until the soup turns silky and coats a spoon — this flour thickening is the signature of harira.
  8. 8
Stir in the remaining coriander and parsley and serve with the lemon wedges and dates.
