The Sichuan-style soup of pork, tofu, mushrooms and bamboo shoots in a lightly thickened broth — its heat comes from white pepper rather than chilli and its sourness from black vinegar, both stirred in at the very end.

Steps

  1. 1
Soak the shiitake and wood ear in the boiling water for 20 minutes. Squeeze them dry, cut off the shiitake stems and slice both thinly; strain and keep the soaking liquid.
  2. 2
Bring the stock and the soaking liquid to the boil, add the pork, mushrooms and bamboo shoots and simmer 3 minutes.
  3. 3
Add the tofu and soy sauce and simmer 2 minutes more.
  4. 4
Mix the cornflour with the cold water, stir it into the soup and simmer for 1 minute, stirring, until the soup thickens and turns glossy.
  5. 5
Lower the heat so the soup barely moves, pour in the beaten eggs in a thin stream and wait 10 seconds before stirring gently, so they set in silky ribbons.
  6. 6
Take off the heat and stir in the vinegar and white pepper — both lose their edge if boiled, which is why they go in last.
  7. 7
Taste: it should be distinctly sour and peppery. Finish with the sesame oil and spring onions.
