Steps
Steps
- 1Heat the grill to high and grill the tomatoes, onion, garlic and jalapeño on a tray for 10–12 minutes, turning, until blackened in spots and soft.
- 2Peel the garlic and pull the stem off the jalapeño (seed it for a milder salsa), then blend everything to a chunky salsa with a pinch of salt.
- 3Heat 1 tbsp of the oil in a saucepan, pour in the salsa — it will splutter — and simmer for 5 minutes until slightly thickened. Frying the salsa deepens its flavour. Keep it warm.
- 4In a frying pan, heat 1 tbsp of the oil, add the beans and cumin, mash them roughly and fry for 5 minutes until thick; season with salt.
- 5Wipe out the pan, heat the remaining oil over medium-high heat and fry each tortilla for 20–30 seconds a side, until blistered but still pliable. Drain on kitchen paper.
- 6In the same pan, fry the eggs sunny side up, keeping the yolks runny, and season them.
- 7Spread each tortilla with beans and top with an egg. Spoon the salsa around the yolk, scatter with the cheese, avocado slices and coriander and serve at once.
