- 1Preheat a stemmed glass with boiling water, then empty it. A cold glass kills the drink instantly.
- 2Add the sugar and a little hot coffee and stir until completely dissolved. Undissolved sugar is what makes the cream sink.
- 3Pour in the whiskey and the rest of the coffee and stir once.
- 4Lightly whip the cream — only until it thickens slightly and just holds a trail. It must still be pourable, not stiff.
- 5Pour the cream slowly over the back of a warm bar spoon held against the surface, so it floats in a distinct layer.
- 6Do not stir. Serve immediately, and drink the hot coffee through the cool cream.
