Steps
Steps
- 1Season the lamb with the salt and pepper. Heat the oil in a large, heavy casserole over medium-high heat and brown the lamb in batches, 5 minutes per batch. Browning is optional in the oldest versions, but it adds depth.
- 2Cut the floury potatoes into small 2 cm pieces and the waxy potatoes into large 5 cm chunks.
- 3Return all the lamb to the pot, add the onions, carrots, floury potatoes, thyme and bay leaves and pour in the water to just cover. Bring to the boil and skim.
- 4Cover and simmer very gently for 1 hour.
- 5Lay the waxy potatoes on top, cover and simmer for 45–60 minutes more, until the lamb is tender and the large potatoes are cooked; the small ones will have melted into the broth.
- 6Remove the thyme stalks and bay leaves, season and rest for 10 minutes. Like most stews, it is even better the next day.
- 7Scatter with parsley and serve in deep bowls.
