Steps
Steps
- 1Melt the butter in a small pan over low heat, stir in the flour and cook, stirring, for 10–12 minutes until it is the colour of milk chocolate. A well-browned roux gives the curry its nutty depth.
- 2Take the pan off the heat, stir in the curry powder and garam masala, and set aside.
- 3Heat the oil in a large pot over medium-high heat, brown the chicken for 5 minutes and lift it out.
- 4Fry the onions in the same pot over medium heat for 10 minutes until soft and golden, adding the garlic and ginger for the last minute.
- 5Return the chicken, add the carrots, potatoes and stock, bring to the boil, skim, and simmer for 15 minutes until the vegetables are tender.
- 6Whisk a ladle of the hot stock into the roux until smooth, then stir it into the pot.
- 7Add the apple, soy sauce, ketchup and honey and simmer for 10 minutes more, stirring often, until the curry coats the back of a spoon. Season with salt.
- 8Spoon the rice onto one side of each plate and pour the curry alongside.
