East African tomato and onion salad — three ingredients, sharp with lime and chilli, served alongside almost everything.

  • 4 pieces tomatoes, firm
  • 1 pieces red onion
  • 1 pieces green chilli
  • 20 g fresh coriander, chopped
  • 3 tbsp lime juice
  • 0.5 tsp salt

    Slice the onion as thinly as you possibly can.

    Soak the sliced onion in cold salted water for 10 minutes, then drain and pat dry. This single step is what separates a good kachumbari from a harsh one.

    Deseed the tomatoes and dice them small so the salad does not turn watery.

    Finely chop the chilli, removing the seeds if you want it milder.

    Combine everything with the lime juice, coriander and salt.

    Let it stand 10 minutes before serving so the flavours settle.
