Steps

  1. 1
Heat the oven to 200°C (180°C fan). Soak the raisins in the rum for 15 minutes.
  2. 2
Whisk the yolks with the milk, flour, vanilla and salt into a smooth, thick batter.
  3. 3
Whisk the egg whites to soft peaks, add the 30 g sugar and whisk until glossy, then fold into the batter in two additions.
  4. 4
Melt half the butter in a 28 cm ovenproof frying pan over medium heat, pour in the batter and scatter over the drained raisins. Cook for 4–5 minutes, until the underside is golden.
  5. 5
Transfer the pan to the oven for 6–8 minutes, until the pancake is puffed and set on top.
  6. 6
Back on the hob, tear the pancake into bite-sized pieces with two forks or spatulas. Add the rest of the butter and 1 tbsp sugar and toss over medium heat for 2–3 minutes, until the edges caramelise.
  7. 7
Pile onto plates, dust heavily with icing sugar and serve hot with the plum compote.
