Steps
Steps
- 1The dark skin of Black Sea turbot is studded with hard bony knobs: cut them away with scissors or a sharp knife, or remove the dark skin entirely. Rinse the steaks and pat them dry.
- 2Season with the salt, pepper and lemon juice and leave for 15 minutes.
- 3Set out three dishes: the flour, the beaten eggs and the breadcrumbs.
- 4Pat the fish dry again, then coat each steak in flour, egg and breadcrumbs, pressing the crumbs on.
- 5Heat the oil, about 1 cm deep, in a wide frying pan to 170°C.
- 6Fry the turbot for 4–5 minutes per side, until golden and the flesh near the bone is opaque — turn it only once, with a fish slice, so the coating stays whole.
- 7Drain on kitchen paper and serve hot with the lemon wedges.
