Steps
Steps
- 1Mix the soy sauce, sake, ginger, garlic and sugar, toss with the chicken and marinate for 30 minutes in the fridge.
- 2Heat the oil in a deep pan to 165°C.
- 3Drain the chicken and toss it in the potato starch, pressing it on and shaking off the excess. Leave for 2 minutes until the starch looks damp in places.
- 4Fry in batches for 3 minutes, then lift out and rest for 4 minutes on a rack while the heat carries on cooking the inside gently.
- 5Raise the oil to 185°C and fry the chicken again for 1 minute until deep golden and crisp. The rest and the hot second fry are what make the crust crackle.
- 6Serve hot with the lemon wedges, mayonnaise and cabbage.
