Steps

  1. 1
Butterfly each steak and pound it between sheets of cling film into a thin escalope about 4 mm thick and 20 × 12 cm. Season with the salt and pepper.
  2. 2
Chill the kajmak until firm, then shape it into 4 logs about 10 cm long.
  3. 3
Lay a log of kajmak along one short end of each escalope, fold in the sides and roll up tightly so the cheese is completely sealed in; secure with a cocktail stick if needed.
  4. 4
Set out three plates: the flour, the beaten eggs and the breadcrumbs. Coat each roll in flour, then egg, then crumbs, then dip it again in egg and crumbs — the double coat keeps the kajmak in.
  5. 5
Chill the rolls for 20 minutes so the coating sets.
  6. 6
Heat the oil in a deep pan to 160°C/320°F and fry the rolls for 10–12 minutes, turning, until deep golden and the pork is cooked through; a moderate heat cooks the meat before the crust burns.
  7. 7
Drain on kitchen paper, pull out any cocktail sticks and serve at once with the tartare sauce and lemon wedges.
