Steps

  1. 1
Melt the butter in a pot over medium heat and soften the onion, carrot and celery for 8 minutes, stirring, until the onion is translucent.
  2. 2
Take the pot off the heat, stir in the paprika for a few seconds, then pour in the hot water straight away so the paprika doesn't scorch and turn bitter.
  3. 3
Add the potatoes, salt and savory, bring to the boil and simmer 20–25 minutes, until the potatoes are soft and some have started to break up and thicken the soup.
  4. 4
Season with the black pepper, take the pot off the heat and let it stand 2 minutes so it stops bubbling.
  5. 5
Beat the eggs with the yoghurt in a bowl until smooth.
  6. 6
Whisk in a ladle of the hot soup, then a second, to warm the mixture gradually.
  7. 7
Pour it back into the pot in a thin stream, stirring all the time; don't let the soup boil again, or the egg will curdle.
  8. 8
Stir in the parsley and serve hot.
