Steps

  1. 1
Heat the oil in a heavy pot over medium heat and fry the onion and carrot for 8 minutes, stirring, until the onion is soft and golden.
  2. 2
Add the garlic for 1 minute, then take the pot off the heat and stir in the paprika — off the flame it colours the oil red without scorching.
  3. 3
Return to the heat, add the tomatoes and cook for 5 minutes until they lose their raw smell and the oil starts to separate.
  4. 4
Add the potatoes and stir for 2 minutes to coat them in the red base.
  5. 5
Pour in enough hot water to just cover the potatoes, add the bay leaf, salt and pepper, and bring to the boil.
  6. 6
Lower to a gentle simmer, half-cover and cook for 25–30 minutes, stirring now and then, until the potatoes are soft enough to break with a spoon.
  7. 7
Crush a few pieces of potato against the side of the pot and stir — the released starch thickens the liquid into a stew rather than a soup.
  8. 8
Remove the bay leaf, stir in most of the parsley and rest off the heat for 10 minutes. Serve scattered with the rest of the parsley, with pickles on the side.
