Steps
Steps
- 1Boil the potatoes in their skins in water with the salt for 25–30 minutes, until a knife slides in easily.
- 2Drain, peel while still hot and mash smoothly, then spread out to cool completely — warm mash makes a soft, sticky mixture that falls apart in the oil.
- 3Mix the cold mash with the eggs, sirene, dill, spring onions, flour and pepper until evenly combined.
- 4With wet hands shape 12 flat patties about 2 cm thick and coat each in breadcrumbs.
- 5Heat the oil in a wide frying pan over medium heat to about 170°C/340°F.
- 6Fry the patties in batches for 3–4 minutes per side until deep golden and crisp, turning them carefully just once.
- 7Drain on kitchen paper and serve hot with the yoghurt.
