Steps
Steps
- 1Cut the potatoes into even chunks of about 4 cm and put them in a pot of cold water with 1 teaspoon of the salt.
- 2Bring to the boil and simmer for 18–20 minutes, until a knife meets no resistance.
- 3Drain well and return the potatoes to the hot pot over low heat for 1–2 minutes, shaking it, until the surface moisture has steamed off.
- 4Meanwhile heat the milk with the butter until the butter melts; don't let it boil.
- 5Mash the potatoes with a masher or press them through a ricer — never a blender, which turns them gluey.
- 6Beat in the hot milk a little at a time with a wooden spoon until the mash is smooth and soft, season with the remaining salt and the pepper and serve hot.
