Steps
Steps
- 1Beat the flour, eggs, salt, nutmeg and water with a wooden spoon for 5 minutes, until the batter is thick, smooth and elastic and bubbles appear; it should drip slowly off the spoon. Rest it for 15 minutes.
- 2Melt 30 g of the butter in a frying pan over medium heat and fry the onions for 15–20 minutes, stirring, until deep golden and crisp at the edges. Drain on kitchen paper.
- 3Heat the oven to 180°C and bring a large pan of salted water to the boil.
- 4Press the batter through a spätzle maker or a colander with large holes straight into the simmering water, in 3 batches. The spätzle are done when they float, after 1–2 minutes.
- 5Lift each batch out with a slotted spoon, drain briefly and layer in a buttered ovenproof dish with the two cheeses and some pepper, finishing with cheese.
- 6Dot with the remaining butter and bake for 10 minutes, until the cheese has melted and bubbles.
- 7Top with the fried onions and chives and serve hot.
