Katmi are thick, lacy Bulgarian pancakes from a yeasted batter, fried in a very hot pan and eaten for breakfast with honey, jam or sirene. The yeast gives them their holes, and a properly hot pan sets the lace.

Steps

  1. 1
Stir the yeast and sugar into the lukewarm milk and leave for 10 minutes until foamy.
  2. 2
Whisk in the eggs, water, salt and 3 tbsp oil, then the flour a little at a time, until the batter is smooth and as thick as single cream.
  3. 3
Cover and leave in a warm place for 1 hour, until the surface is covered in bubbles and the batter has nearly doubled.
  4. 4
Heat a heavy 22–24 cm frying pan (traditionally a cast-iron katmi pan) over medium-high heat until very hot, and grease it with a little oil on kitchen paper.
  5. 5
Without stirring the batter again, ladle about 120 ml into the centre and tilt the pan so it spreads into a disc about 5 mm thick — stirring knocks out the bubbles and the katmi come out without holes.
  6. 6
Cook for about 2 minutes, until the top is set and full of holes and the underside is deep golden, then flip and cook for 1 minute more.
  7. 7
Re-grease the pan before each katma and stack them on a plate under a cloth so they stay soft.
  8. 8
Serve warm, folded in four, with honey, jam or crumbled sirene.
