Steps
Steps
- 1Put both minces in a large bowl and sprinkle over the salt, cumin, pepper and bicarbonate of soda.
- 2Add the cold mineral water a little at a time and knead with your hand for 8–10 minutes, until the mince turns sticky and pale and the water is fully absorbed — the long kneading and the soda are what make kebapcheta springy rather than crumbly.
- 3Cover the bowl and chill for at least 2 hours, ideally overnight, so the spices penetrate and the mixture firms up.
- 4With wet hands, shape the mixture into 12 rolls about 10 cm long and 2.5 cm thick, smoothing the surface so it doesn't crack on the grill.
- 5Heat a charcoal grill or a ridged grill pan over high heat until very hot, and brush the grates with the oil.
- 6Grill the kebapcheta for 10–12 minutes, giving them a quarter turn every 2–3 minutes, until browned all round and the juices run clear when one is pressed.
- 7Rest for 2 minutes and serve hot with the lyutenitsa.
