Steps
Steps
- 1Heat the oil in a pot over medium heat and soften the onion and carrot for 8 minutes.
- 2Add the sauerkraut and cook, stirring, for 10 minutes, until it softens and starts to smell sweet — frying the cabbage first takes the sharp edge off its sourness.
- 3Take the pot off the heat and stir in the paprika, then pour in the hot water straight away so the paprika doesn't burn.
- 4Add the rice, bay leaf and chilli, bring to the boil and simmer 20 minutes, until the rice is soft.
- 5Add the brine a little at a time, tasting, until the soup is pleasantly sour; season with the black pepper, and with salt only if needed — the cabbage is already salty.
- 6Remove the bay leaf and chilli, rest 5 minutes and serve hot.
