Steps
Steps
- 1Put the kombu in the cold water and heat it slowly, lifting it out just before the water boils. Bring to the boil, add the bonito flakes, take off the heat and let them sink for 2 minutes, then strain without squeezing.
- 2Press the aburaage between sheets of kitchen paper to remove the excess oil and cut each sheet in half diagonally.
- 3Simmer the aburaage in 200 ml of the dashi with 2 tbsp of the soy sauce, 2 tbsp of the mirin and the sugar over low heat for 10 minutes, turning once, until most of the liquid has been absorbed — the tofu should be juicy and sweet.
- 4Season the remaining dashi with the remaining soy sauce and mirin and the salt, and keep it hot without boiling.
- 5Cook the udon according to the packet and drain.
- 6Divide the noodles between bowls, pour over the hot broth and lay the aburaage on top.
- 7Finish with the spring onions and a pinch of shichimi togarashi.
