Steps
Steps
- 1Rub the lamb all over with most of the salt, the pepper, oregano, the juice of both lemons, half the olive oil and the garlic, then leave it to marinate in the fridge for at least 2 hours, or overnight.
- 2Heat the oven to 160°C/320°F. Line a deep roasting tin with a large sheet of foil and lay two overlapping sheets of baking paper on top, leaving enough overhang to wrap everything.
- 3Toss the potatoes, onions and tomatoes with the remaining olive oil and the last pinch of salt and spread them over the paper.
- 4Set the lamb on top with all its marinade, tuck in the rosemary and bay leaves and scatter over the feta.
- 5Bring the paper up over the meat, fold and crimp the edges into a tight parcel, then wrap the foil around it so no steam can escape — the sealed parcel is what makes kleftiko.
- 6Bake for 3 hours 30 minutes without opening, until the meat is soft enough to pull from the bone with a spoon.
- 7Open the parcel, turn the oven up to 200°C/390°F and bake uncovered for 20–25 minutes, until the lamb and potatoes take on colour at the edges.
- 8Rest for 10 minutes and serve straight from the paper, spooning the juices over the meat and potatoes.
