Kourabiedes
The Greek Christmas butter biscuits — a short almond dough made with long-whipped butter and a splash of brandy, baked pale, sprinkled with rose water and buried in icing sugar. Whipping the butter for a full ten minutes gives their melting, sandy texture.

- 1Heat the oven to 180°C. Toast the almonds on a tray for 6–8 minutes, until pale golden, then cool and chop them finely.
- 2Beat the butter with the 60 g of icing sugar on high speed for 10 minutes, until very pale and fluffy.
- 3Beat in the egg yolk, brandy and vanilla.
- 4Sift the flour with the baking powder and work it in gradually by hand together with the almonds, just until a soft dough forms that does not stick.
- 5Shape into crescents or balls of about 25 g and set them on trays lined with baking paper.
- 6Bake for 18–20 minutes, until barely golden underneath; the tops should stay pale.
- 7Leave for 5 minutes, then sprinkle the warm biscuits with the rose water.
- 8Sift a thick layer of icing sugar onto a tray, set the biscuits on it and sift the rest over them until they are completely buried. Leave to cool before storing them in a tin.
