The custard slice of Serbian and Bulgarian pastry shops — a tall layer of light vanilla cream set between two sheets of crisp puff pastry and dusted with icing sugar. Folding meringue into the custard while it is boiling hot gives the airy, trembling cream.

Steps

  1. 1
Heat the oven to 200°C. Roll the puff pastry into two sheets the size of a 22 x 30 cm dish, set them on lined trays and prick them all over with a fork.
  2. 2
Bake for 15–18 minutes, until golden and crisp, pressing them flat with a second tray for the first 10 minutes so they rise evenly. Leave to cool.
  3. 3
Line the dish with baking paper, leaving it overhanging, and lay one pastry sheet in the base.
  4. 4
Heat 800 ml of the milk with the vanilla until steaming. Whisk the yolks, the sugar for the custard and the cornflour with the remaining 200 ml of cold milk until smooth.
  5. 5
Whisk a ladle of the hot milk into the yolks, pour it all back into the pan and cook over medium heat, whisking constantly, until very thick and bubbling, then 2 minutes more.
  6. 6
Meanwhile whisk the whites to soft peaks, add the sugar for the meringue gradually and whisk until stiff and glossy.
  7. 7
Take the custard off the heat and immediately fold in the meringue in three additions with large strokes until no streaks remain — the heat of the custard sets the whites.
  8. 8
Spread the cream at once over the pastry base, smooth it and lay the second sheet on top, pressing lightly.
  9. 9
Chill for at least 4 hours, until set. Dust thickly with icing sugar, lift out by the paper and cut with a serrated knife.
