Steps
Steps
- 1Wash the herbs and dry them very well in a salad spinner and on a towel before chopping — wet herbs make a soggy kuku.
- 2Beat the eggs with the turmeric, salt and pepper, then stir in the herbs, spring onions, walnuts and barberries; the mixture should be thick and green, barely held together by the egg.
- 3Heat the oil in a 24 cm non-stick frying pan over medium heat, pour in the mixture and smooth the top.
- 4Cover and cook on low heat for 15–18 minutes, until the edges are set and browned and the top is almost firm.
- 5Cut into quarters in the pan and turn each piece with a spatula, then cook uncovered for 5–7 minutes more, until set right through.
- 6Serve warm or at room temperature, cut into wedges, with the yoghurt.
