Short, crumbly Bulgarian butter biscuits cut into rounds or stars, baked pale and either sandwiched with jam or left plain, then rolled in icing sugar. Chilling the dough before rolling keeps the shapes sharp.

Steps
Steps
- 1Beat the soft butter with the icing sugar for 3–4 minutes until pale and fluffy, then beat in the egg and vanilla.
- 2Mix the baker's ammonia evenly into the flour (or use 1 tsp baking powder), then work it into the butter in two or three additions with your hands until you have a soft dough that no longer sticks — stop as soon as it comes together, or the biscuits turn hard.
- 3Flatten the dough into a disc, wrap it and chill for 30 minutes.
- 4Heat the oven to 180°C and line two trays with baking paper.
- 5Roll the dough out on a lightly floured surface to 4–5 mm and cut rounds or stars; cut a small hole in the centre of half of them for the tops.
- 6Bake on the middle shelf for 10–12 minutes, until set and only just colouring at the edges — they should stay pale. Baker's ammonia smells strongly as it bakes, but the smell disappears completely.
- 7Leave to cool on the tray for 5 minutes — they are fragile while hot.
- 8Spread the bases with jam and press a top onto each; leave the plain ones as they are.
- 9Roll or dust all the biscuits generously in icing sugar and keep them in a tin — they are best the next day.
