Steps
Steps
- 1Put the lamb in a large pot with the cold water and bring slowly to the boil over medium heat, skimming off all the grey foam as it rises — a clear broth depends on this.
- 2Add the salt, peppercorns, bay leaves and chilli, lower to a gentle simmer, half-cover and cook for 1 hour 30 minutes until the meat comes away from the bone.
- 3Lift out the lamb and let it cool a little, then strip the meat from the bones in bite-size pieces and discard the bones and gristle. Strain the broth; you need about 2 litres.
- 4Heat the oil in a frying pan over medium heat and fry the onions and peppers for 8–10 minutes until soft.
- 5Take the pan off the heat, stir in the paprika, then add the tomatoes and cook for 3 minutes more.
- 6Return the strained broth to the pot, bring it to the boil, add the rice and the vegetables and simmer for 15 minutes.
- 7Return the meat to the pot and simmer for 5–10 minutes more until the rice is completely soft; taste and adjust the salt.
- 8Take off the heat and stir in the parsley and the mint, rubbing the dried mint between your palms over the pot to release its aroma.
- 9Rest for 5 minutes and serve hot.
