Steps
Steps
- 1Rinse the lentils, cover with the water in a pan and simmer for 12–15 minutes, stirring often, until soft and all the water has been absorbed. Spread out to cool.
- 2Soften the onion and carrot in 2 tablespoons of the oil over medium heat for 6–8 minutes, adding the garlic for the last minute.
- 3Mash the lentils roughly and mix them with the onion and carrot, cumin, paprika, savory, salt, pepper, parsley and 60 g of the breadcrumbs.
- 4Chill the mixture for 20 minutes — it firms up and becomes much easier to shape.
- 5With wet hands shape 12 flat patties and coat them in the remaining breadcrumbs.
- 6Heat the rest of the oil in a frying pan over medium heat and fry the patties for 3–4 minutes per side, until crisp and brown.
- 7Drain on kitchen paper and serve hot with the lemon wedges.
