Steps

  1. 1
Soak the bread in the water for 5 minutes, squeeze it out and crumble it into a bowl with both minces, the onion, egg, cumin, pepper and 1 tsp of the salt.
  2. 2
Knead for 5 minutes until sticky, then with wet hands shape 14–16 elongated kyufteta about 7 cm long.
  3. 3
Heat the oil in a deep frying pan over medium-high heat and fry the potato slices in batches for 4–5 minutes, until golden but not cooked through; drain on kitchen paper and sprinkle with half a teaspoon of the salt.
  4. 4
In the same oil, fry the kyufteta for 2 minutes per side, just to brown them — they finish cooking in the oven.
  5. 5
Heat the oven to 200°C. Pour off all but 2 tbsp of the oil, add the garlic for 30 seconds, then the tomatoes, tomato purée, hot water and the remaining salt, and simmer for 5 minutes.
  6. 6
In a baking dish, stand the kyufteta and potato slices in alternating rows, tucking the pepper strips between them.
  7. 7
Pour the tomato sauce evenly over the top and bake for 30–35 minutes, until the sauce has thickened and browned at the edges and the potatoes are tender to a knife.
  8. 8
Rest for 10 minutes and serve sprinkled with the parsley.
