Creamy and aromatic lamb liver pâté with herbs – a delicious Easter appetiser spread on toasted bread slices.

  • 400 g lamb liver
  • 80 g butter
  • 1 pc onion
  • 2 cloves garlic
  • 50 ml white wine
  • 0.5 tsp thyme
  • to taste salt and pepper
  • 1 bunch parsley

    Clean and slice the liver.

    Melt half the butter, sweat onion and garlic.

    Add the liver and cook 5–7 minutes.

    Deglaze with wine and cook off.

    Blend all ingredients with remaining butter, thyme and parsley until smooth.

    Season, pack into ramekins and chill 2 hours.
