- 1Brown the lamb in butter.
- 2Slice the leeks and add to the pot; cook 10 minutes.
- 3Add water to cover, season and simmer 45 minutes.
- 4Make a roux with flour and a little broth.

- 6Simmer gently 5 minutes and serve.
