A traditional Bulgarian spring dish of tender lamb braised with fresh nettles and an egg-yoghurt sauce – as seasonal as it gets.

  • 600 g lamb pieces
  • 400 g nettles (blanched)
  • 2 pcs onion
  • 40 g butter
  • 2 pcs eggs
  • 200 ml yoghurt
  • 1 tbsp flour
  • to taste salt
