Sarmi rolled in young dock leaves around rice, onion, mint and paprika — the spring version of the Bulgarian stuffed-leaf dish, cooked without meat during the Lent before Easter. A few seconds in boiling water makes the leaves pliable.

Steps

  1. 1
Wash the dock leaves, cut off the stems and pour boiling water over them in a colander for a few seconds, just until they turn dull green and pliable.
  2. 2
Fry the onions and spring onions in half the oil over medium heat for 5 minutes, then add the rice and stir for 2 minutes until the grains turn translucent at the edges.
  3. 3
Take off the heat and stir in the paprika, mint, dill, pepper and salt.
  4. 4
Lay a leaf veined side up, put a teaspoon of filling near the stem end, fold in the sides and roll up without pulling tight — the rice swells as it cooks.
  5. 5
Line a pot with a few torn leaves and pack the sarmi in tight rows, seam side down.
  6. 6
Pour over the remaining oil and the hot water, and weigh the rolls down with an upturned heatproof plate.
  7. 7
Bring to a simmer, cover and cook on low heat for 40–45 minutes, until the rice is soft and most of the liquid has been absorbed.
  8. 8
Sprinkle with the lemon juice, leave to rest for 10 minutes and serve warm or at room temperature.
