Steps
Steps
- 1Rinse the sea bass, pat dry inside and out and cut 3 diagonal slashes on each side down to the bone.
- 2Season inside and out with 1 tsp of the salt and the pepper. Fill each cavity with slices from one of the lemons and the parsley stalks.
- 3Brush the fish all over with 2 tbsp of the olive oil and sprinkle with the oregano.
- 4Heat a charcoal grill or a ridged grill pan over high heat until very hot and oil the grates well.
- 5Grill the fish for 7–8 minutes without moving it, until the skin is charred and releases from the grill, then turn carefully with a wide spatula and grill for 6–7 minutes more, until the flesh at the slashes is opaque to the bone.
- 6Meanwhile whisk the remaining olive oil with the juice of the second lemon, the garlic, the chopped parsley leaves and the remaining salt until it thickens.
- 7Lift the fish onto a platter, spoon the dressing over and serve at once.
