Steps
Steps
- 1Heat the oil in a wide, heavy pan over medium heat and fry the onions for 8–10 minutes, until soft and golden.
- 2Add the peppers, stir to coat and cook covered for 10 minutes, stirring now and then, until they start to soften.
- 3Take the pan off the heat and stir in the paprika, so it colours the oil without burning.
- 4Add the tomatoes, salt and sugar, return to a medium-low heat and simmer uncovered for 15–20 minutes, until the peppers are silky and most of the liquid has cooked away.
- 5Season with black pepper and taste for salt; lecsó is even better reheated the next day.
- 6Serve hot as a main, or warm as a side.
