The French tarte au citron — a crisp, sweet shortcrust case filled with a sharp lemon custard baked just until it sets with a wobble. Blind-baking the case thoroughly is what keeps the base crisp under the wet filling.

Steps

  1. 1
Pulse the flour, icing sugar, salt and butter in a food processor to fine crumbs. Add the yolk and water and pulse just until the dough clumps. Flatten into a disc, wrap and chill for 30 minutes.
  2. 2
Roll the pastry 3 mm thick and line a 23 cm loose-bottomed tart tin, letting the excess hang over the rim. Prick the base with a fork and freeze for 15 minutes.
  3. 3
Heat the oven to 190°C (170°C fan). Line the case with baking paper and fill it with baking beans. Bake for 15 minutes, lift out the paper and beans and bake for 10 minutes more, until the base is dry and golden. Trim the overhang with a sharp knife.
  4. 4
Lower the oven to 140°C (120°C fan).
  5. 5
Whisk the eggs and caster sugar until just combined, without whisking in air. Stir in the lemon zest and juice, then the cream. Strain into a jug and skim off the foam.
  6. 6
Set the tart case on a baking tray on the oven shelf and pour the filling in there, right to the top: a full tart spills on the way to the oven.
  7. 7
Bake for 30–35 minutes, until the filling is set at the edges with a slight wobble in the centre.
  8. 8
Cool completely, then chill for at least 2 hours. Dust with icing sugar before serving.
