Steps

  1. 1
Soak the beans overnight in plenty of cold water, then drain.
  2. 2
Cover with fresh water in a pot, add the bay leaf and boil hard for 10 minutes — this destroys the natural toxin in raw kidney beans — then simmer for 1 hour to 1 hour 30 minutes, until very soft. Drain, keeping 300 ml of the cooking water.
  3. 3
Meanwhile heat the oil in a wide pan and fry the onions for 10 minutes until golden.
  4. 4
Crush the walnuts and garlic with the salt in a mortar or food processor to a coarse paste.
  5. 5
Add the beans to the onions with the walnut paste, khmeli-suneli, ground coriander, chilli flakes and enough of the cooking water to loosen, and simmer for 10 minutes, mashing about half the beans with a spoon.
  6. 6
Take off the heat and stir in the vinegar and most of the fresh coriander.
  7. 7
Serve warm or at room temperature, scattered with the remaining coriander and the pomegranate seeds.
