Steps

  1. 1
Dissolve the yeast and sugar in the lukewarm water and leave for 10 minutes, until foamy.
  2. 2
Whisk it into the flour and salt and beat for 2 minutes into a smooth, thick, stretchy batter, like a thick pancake batter.
  3. 3
Cover and leave in a warm place for 1 hour, until doubled and full of bubbles.
  4. 4
Simmer the honey with the sugar and water for the syrup for 5 minutes and keep the syrup warm.
  5. 5
Heat the oil in a deep pan to 175°C.
  6. 6
Take a handful of batter, squeeze it up between your thumb and forefinger and scoop off walnut-sized balls with a teaspoon dipped in the hot oil, dropping them into the pan.
  7. 7
Fry in batches for 3–4 minutes, turning, until deep golden all over, and lift out onto kitchen paper. Too many at once cools the oil and they turn greasy.
  8. 8
Toss the hot puffs in the warm syrup or pour it over them, pile them on a plate, sprinkle with cinnamon and walnuts and serve at once.
