Steps
Steps
- 1Roast the peppers, chillies and tomatoes on a hot grill or under the oven grill at 250°C, turning, until the skins char and blister — about 20 minutes for the peppers and 10 minutes for the chillies and tomatoes.
- 2Steam the peppers and chillies in a covered bowl for 10 minutes, then peel, deseed and pour off their juices. Peel the tomatoes.
- 3In a wooden mortar, pound the garlic with a pinch of salt to a paste, then add the peppers and chillies and pound them to a coarse mash. Leave some pieces — do not use a blender.
- 4Chop the tomatoes, removing the seeds if they are very juicy, and pound them briefly into the mash. The tomatoes go in last so the lyutika does not turn runny.
- 5Stir in the oil and the crumbled sirene, mashing lightly so some of the cheese blends into the peppers and some stays in crumbs. Taste before salting — sirene is already salty.
- 6Scatter with parsley and serve at room temperature with bread, as a starter with rakia. Eat it the same day.
