Steps
Steps
- 1Dissolve the yeast and sugar in the lukewarm water, add the flour, salt and 2 tbsp of the olive oil and knead for 10 minutes into a soft, smooth dough. Cover and leave for 1 hour until doubled.
- 2Heat the oven to 240°C/465°F with a heavy baking tray inside.
- 3Mix the za'atar with the remaining olive oil into a loose paste.
- 4Divide the dough into 6 balls and roll each into a round about 20 cm across and 5 mm thick.
- 5Press dimples all over with your fingertips, leaving a 1 cm border, and spread each round with the za'atar oil; the dimples hold the oil.
- 6Bake on the hot tray for 7–9 minutes, until the edges are golden and the base crisp but the bread still soft.
- 7Serve warm, rolled or folded around the tomato, cucumber and mint.
