Steps

  1. 1
Peel the mangoes, cut the flesh away from the stones and dice it into 1 cm cubes. Firm fruit is the point: it holds its shape through the long simmer.
  2. 2
Heat the oil in a wide, heavy pan over medium heat and fry the nigella, cumin and coriander seeds and the cardamom pods for 30 seconds, until fragrant and starting to pop.
  3. 3
Add the ginger and garlic and stir for a minute, then add the vinegar, sugar, salt and chilli flakes and stir until the sugar dissolves.
  4. 4
Add the mango, bring to the boil, then simmer uncovered for 45–60 minutes, stirring more often as it thickens.
  5. 5
It is ready when the syrup is thick and glossy and a spoon drawn across the base leaves a clear trail for a second or two. It thickens further as it cools.
  6. 6
Spoon into hot sterilised jars, seal and leave to mature for at least two weeks before opening. Unopened jars keep for a year; once opened, keep it in the fridge.
