Steps

  1. 1
Mix the flour, egg, cold water and 1 tsp of the salt into a firm, smooth dough, knead for 8 minutes, then cover and rest for 30 minutes.
  2. 2
Mix the minced meat with the onion, parsley, 1/2 tsp of the salt and the black pepper.
  3. 3
Stir the garlic into the yoghurt and leave it at room temperature so it is not fridge-cold when served.
  4. 4
Roll the dough out on a floured surface as thin as you can, about 1 mm, and cut it into 3 cm squares.
  5. 5
Put a chickpea-sized piece of filling in the centre of each square, then bring the four corners up and pinch all the edges together into a little pouch.
  6. 6
Bring a large pan of water to the boil with the remaining salt and cook the manti in two batches for 8–10 minutes, until they float and the dough is tender; drain.
  7. 7
Melt the butter in a small pan, stir in the tomato paste and Aleppo pepper and let it sizzle for 1 minute until the butter turns red.
  8. 8
Divide the manti between warm plates, spoon over the garlic yoghurt, drizzle with the red butter and scatter with the dried mint and sumac.
