Steps
Steps
- 1Lightly crush the cardamom pods, cloves and peppercorns in a mortar, just enough to crack them.
- 2Bring the water to the boil in a saucepan with the crushed spices, ginger and cinnamon stick, and simmer for 5 minutes to draw out their flavour.
- 3Add the tea and sugar and simmer for 2 minutes more; the brew should turn very dark.
- 4Pour in the milk and bring back to the boil. When it rises up the pan, lower the heat, then let it rise again two or three times — boiling the tea with the milk is what gives chai its body.
- 5Strain through a fine tea strainer into cups and serve hot.
