Steps
Steps
- 1Beat the butter with the icing sugar for 2–3 minutes until creamy, then beat in the yolks one at a time with the vanilla and lemon zest.
- 2Sift in the flour with the salt and bring it together by hand into a soft dough, kneading only until smooth — long kneading and warm hands make the biscuits hard.
- 3Flatten the dough into a disc, wrap it and chill for 30 minutes.
- 4Heat the oven to 180°C and line two baking trays with baking paper.
- 5Roll the dough 3–4 mm thick on a lightly floured surface and cut rounds with a 5 cm fluted cutter. Cut a small hole in the centre of half of them with a piping nozzle or a smaller cutter, and re-roll the trimmings.
- 6Bake for 10–12 minutes, until the edges are only just colouring — maslenki should stay pale. Leave them on the tray until cold, as they break easily while warm.
- 7Spread each whole round with about half a teaspoon of jam, leaving a thin border.
- 8Dust the rounds with holes heavily with icing sugar, set them on the jam-covered ones and press lightly so the jam shows through the hole.
- 9Keep them in a tin for a day before serving — the jam softens them slightly and they are at their best on the second day.
